Let’s see here. There are 8 wires (4 pairs) in there. That’s twice as many pairs as red, black, yellow, and green in an RJ-11 connector. Wait! I just googled the RJ-11 connector. The RJ-11 connector has two pins that don’t connect to a wire. That seems like a waste.

The modular handset cord also has two pairs, and a connector that accommodates them only. The larger connector for the wall cord prevents mismating.
 
Will ordinary, flat, modular phone cable support 10Base-T ethernet?

Dang! I knew should have kept that carboard box full of old phone stuff instead of taking it to Goodwill!
Any 4 cores will support it. Will you get gigabit/s through? No. Will you get data through it, yes. Cat 5 twists matching pairs together. The different pairs have different twist rates to reduce contact points between pairs and reduce crosstalk between pairs. Cat 6 has a central separator to reduce that further.
You can get stranded cat5 for flexible connections. Make sure you use the stranded connector crimp. This is now in the wrong section as it's well past lol :)

What’s the difference between Cat5 and Cat5e?
