open rocket motor question

I want to use a I-600R motor but want to use a plugged motor for dual deploy and the only options I see
are 6-10-14 seconds How can I change the sim to a 0 delay "plugged" motor ?

I would just leave it at any delay setting, and ignore the deployment velocity warning. With altimeter deployment, you don't even need the sims recommend delay time.

For dual deploy, I would then only be using the sim for computed stability. SIM sets the CP, I override mass and CG. I get a good rail exit velocity And I get a good guess on expected altitude.
 
Not that I have ever seen.

But that also isn't a feature I look for while doing a simulation.

In OpenRocket - just type in a delay of zero - you can type in any value - you don't *have* to use the drop down values.

open rocket can plot the simulated flight data on a graph, however it does not do this in real time.
