I want to start building scale models of rockets and I am not really sure where to start. the kits I have found don't have the level of detail I am looking for so I thought I would ask here. if I had to pick what I want to model sounding rockets are pretty cool so I guess those.

What type of Sounding Rockets appeal to you most ? ( single-stage, multi-stage, USA, foreign )

What kind of scratch-building experience do you have ?

Are you talking about non-flying models just to put on a shelf?
 
How do you eat an elephant? One bite at a time.

I recommend you pick a rocket you like and then build a series, with each new build adding additional detail. The first version should focus on correct outer mold line and colors. The next, add antennas and small print details, and so on. You will build your skills without overwhelming yourself by trying to do everything with the first item.

I have a good amount of experience building rockets but nothing when it comes to scale stuff.
 
Check out the plastic model kit set from AMT: Man in Space, if you can still find one.
 
Start with the WAC Corporal. It can be as simple as it gets, but at the same time you can create an impressive level of detail once you start to refine it a bit.

Well, now I am curious.... Is this a full scale *flying* model, or just something to display on the front lawn and have your paperboy die of a heart-attack?

I also "speak WAC CORPORAL" and many other "prototype languages" - LOL !

BTW - If you ever build a WAC CORPORAL, the upper stage is YELLOW, not WHITE !
