How big and how many holes should I drill thru a LOC VII motor and payload tubes to prevent separation prior to apogee?

I doubt that large of rocket will be going fast enough to build up much of a pressure differential to cause an early separation. But I would drill a 3/16" - 1/4" in each compartment. You can start with a slightly smaller hole and soak it with CA. Then drill to your final hole size so it's nice and clean.

Thanks for the prompt and detailed response. I agree with your assessment that I shouldn't need a pressure relieving hole but a 3/16" hole could do no harm.

In my 8" FG rocket I used one 3/16" hole in each compartment. Has worked well for me so far. Just make sure they are high enough to not be covered by shifting parachutes or shock cord, but not by NC or AV bay couplers.
