I’ve been using a G79-w10, and I was wondering if anyone knew how many PSI the ejection charge puts off in the single use motors?

That would depend on the volume where it combusts. After measuring your rocket, you should be able to use the charge mass and one of the many ejection charge calculators found online to calculate the pressure.
