BTW - a classic vacuum test with confections is marshmellows. Even Mister Wizard did it. I've done it too.
The air bubbles in them make the marshmellows expand. Until the air bubbles expand so much, that they "pop" the cells of the marshmellows and escape, so the marshmellows begin to shrink even as the pressure is lowered more. Then, stop the pump, let the air rush back in, and the marshmellows are "crushed" by the air pressure. Shrinking to a lot smaller than they were. Here's a great youtube video of it.
