If I put Nickel-Metal Hydride batteries in the Estes Controller will they produce enough current to set off the Estes igniters? I have a set of these batteries and would like to use them.
 
Yes, they'll be fine. I am using a set of Sony CycleEnergy cells in one of my Electron Beam controllers with entirely satisfactory results.

The biggest issue with most NiMH cells is their self-discharge proclivity. That's why I'm using a low-self-discharge type (these are the ones that are usually sold as "pre-charged").

But yes, an AA-size NiMH cell will certainly deliver at least as much current as an AA-size alkaline cell.
 
Most NiMH batteries have a pretty good amperage rating, eventho' the voltage is down a bit (1.2v). The most powerful AA NiMH that I have in my possession were made by Panasonic for their digital camera's. 2400 mAH each.
