1/8" Light ply fins with 1 layer of 6 ounce fiberglass vacuum bagged with foodsaver. I am considering/sort of in the process of adding the same layer to the Estes tubes. Would this be a "good" idea, or just add unnecessary weight?

I have done vacuum bagged CF over bass wood, and it is incredibly strong. You could do 2 oz (or 6 oz) glass over basswood, and get a really strong fin (not Mach 2 strong, but pretty stout) that probably weighs less than the light ply alone.

Weight versus strength is always a person choice. I HATE repairing rockets, so I -over-build them for the landings more than the flights.
