That is an awesome video and probably an irreplicable result. I have just one question. Is the rippling shock wave the sonic boom or is it a phenomenon present throughout the flight and only visible in certain atmospheric conditions? What I am trying to get at; is the appearance of that shock wave the moment the rocket exceeded the speed of sound?

Yes to both of your first questions. And no to the last.

A sonic "boom" doesn't happen just when the aircraft exceeds the speed of sound. It happens all the time that the aircraft is going over the speed of sound. You hear it as a boom when the shock wave passes you.
