Another vendor site with some good beginner info (not as exhaustive as what’s available on Apogee’s site but rather good) is Rocketry Works School of Rocketry: https://www.rocketryworks.com/school-of-rocketry/

John Coker’s site is geared towards high power rocketry but there’s plenty of crossover with model rocketry - he has videos on just about every part of building and flying rockets: https://www.jcrocket.com/

Finally, if you’d like to do a build-a-long of any of dozens of different kits with pro builder Chris Michielssen try his Model Rocket Building blog: https://modelrocketbuilding.blogspot.com/

That’s just scratching the surface - this forum alone has hundreds of informative threads covering just about every topic in hobby rocketry.
 
Buy a beginner kit with clear instructions and start building. Although videos are great for supplementing your learning, nothing is a substitute for building and flying.
Some clubs have make it and take it sessions, where you can learn in a group as you build your first rocket and then fly it with the club. Both NAR and Tripoli have maps to their clubs.
