I found a nice key switch at
American Science & Surplus.

My plan is to use this switch, a momentary contact switch from RS for the launch button, 6V worth of alkaline batteries, and a piezo buzzer that will sound when the key is held to the contact position. I want to use a small metal lunch box type enclosure to mount everything, which would also give some storage room for the wire. Does this sound workable for small beginner-type rockets?

everything sounds good, except for the batteries. I'm sure everyone will tell you this. Replace those batteries with a car or tractor battery. Have the battery sitting on the ground with leads running up into the controller. With the alkaline batteries, you will be replacing them after every few launches.

Thanks. I need one of those rechargeable 12V emergency car boosters/power supplies anyway, so this is a good excuse to get one.
