I've modified the simulation to show more traditional style fins that have been air-foiled, and removed the launch lug.

If I want to break mach... might as well do it traditionally, and the smaller the fins, the better.

They're 1/4" plywood...​

Given the short span, 1/8” should be more than enough. You could go thinner yet with G10.

I'm with @Steve Shannon here. Good 1/8" plywood will be fine. If you wanted to get really exciting, you could probably do a thin hardwood veneer on either side of a piece of 1/16" balsa.
