Allene's is in the same ballpark as Elmer's Glue-All and such, and like all water-based glues it depends a great deal on how heavy-handed you are. It takes a little longer than Titebond II.
One of these group Alpha builds at Museum of Flight (in 2014, I think) was followed by launching the rockets essentially immediately after we finished the build session (within a half hour or so), which was one of the reasons I started with shock cord mounts and then we did things in parallel as things set up. The models held together just fine, though they were flown on either 1/2A6-2s or A8-3s (I don't remember now) on that little patch of ground.
That patch of ground is now where the Aviation Pavilion (a covered outdoor display space where artifacts such as the first 747, first 737, a B-17F, a Concorde and others are on display) is.
