Canards are probably a better way to go for hobby rocketry. Since the motors generally have a low burn time, TVC isn't necessarily an effective stabilizing mechanism. Aero stabilization works as long as you have air and velocity.
 
Did anyone stay on to see the second rocket take off without a rod or rail? Straight off the turf! o_O

That's some very good engineering there. But a fireblanket or some ground protection woiuld be nice, in my opinion.
