I'd like to find good scale data to build the Atlas V, Delta IV in it's various configurations, and the Falcon 9. Does anyone have, or know where I can find such info?

How much are you trying to model? I got all my measurements for my Falcon 9 scale build (here, so maybe the propulsion and decals aren't to scale) from wikipedia and the company page, and verified some of my scales with the LPR kit SpaceX sells.
 
Just so you're aware, all the models you mentioned are available as kits through what was formerly known as DFR technologies. The guy is on here and worked or works for NASA I believe. The kits look really nice and are well detailed. I can't think of what the company name is now but if you go on ebay he has them all there to see.

Glenn thanks for the "plug", I re-branded the models to Real Space Rockets. The flying models currently are designed for 24mm motors, but some additional 18mm models and some changes for 2015 are coming. My focus is on having these models look as realistic as possible, they are not true scale due to the use of common building materials. All of the detail parts are printed on my Stratasys uPrint SE 3D printer in ABS.

The 1/124 Orion EFT-1 version and a Atlas V with the Boeing CST-100 are close to being offered.

Kits are nice, but I find more of a challenge in scratch building my own rockets. Plus, I'm looking at going 4" diameter for these builds. Right now it's all preliminary. What I build and what scale will depend on the data I can find.
