Guinness Beef Stew - Crock Pot
Ingredients
3 lbs stew beef
2 medium onions, chopped
4 cups chicken or beef broth
2 bay leaves
1 teaspoon dried thyme
1 tablespoon brown sugar
1 oz bittersweet chocolate, chopped
1 bottle, plus ¼ cup Guinness Draught
1 pound baby carrots
1 parsnip, chopped
1.5 pounds small red potatoes, scrubbed and quartered
¼ cup flour
Chopped fresh parsley
Instructions
1. Brown the beef in a large skillet with salt and pepper and a dab of oil. Use two batches if necessary. Then transfer the cooked beef to the crock pot insert.
2. Drain all of the fat, except for 1-2 tablespoons. Cook the onions until brown and tender.
3. Add in one bottle of Guinness, broth, thyme, brown sugar, chocolate, and bay leaves. Bring to a simmer and then add it to the crock pot.
4. Stir in the carrots, parsnips and potatoes. Cook in crock pot until the meat is tender, about 5 hours on high.
5. Whisk in the flour and ¼ of beer and cook on high until thickened. Stir in the parsley before serving and enjoy.
I like to serve it with beer bread:
3 cups flour, sifted
3 teaspoons baking powder
1 teaspoon salt
1/4 cup sugar
1 bottle of beer (New Belgium 1554 is excellent here)
1/4 cup melted butter (optional, makes a softer bread. You can also brush it on top for a hearty bread with a nice crust)

Heat over to 375 degrees.
Mix dry ingredients
Stir in melted butter
Stir in the beer
Pour batter into loaf pan. I prefer ceramic ones.
Bake 45 minutes to an hour.
