You can, but Polyester Resins are a pain to work with. They're pretty smelly and arn't as strong as an Epoxy resin.
A good epoxy by itself can make a very strong fillet.

Usually anything cylindrical. PVC, dowels, Pens, Old hobby knifes that I don't use anymore.

I use BSGP to fill any little imperfections in the fillets like dips or ridges. I smear it on, then run over the fillets with my fillet tool. Then, i sand about 80% of it off.

Load up a laminating epoxy with microbaloons! I usually add 2-4 times the weight of the epoxy in microbaloons. It turn it into a nice, thick paste. Use as you would any other filler.

The problem is, that it shrinks as it dries. As it shrinks, it recedes back into the spiral. Sometimes several coats are needed. Fill the spiral, sand it off. Repeat until you are satisfied.
